NEW: Pavlovas Bar

We are thrilled to announce the opening of Pavlova’s bar and cafe, located within the Victoria Palace Theatre.

The bar is named after Anna Pavlova, a Russian prima ballerina of the late 19th and early 20th centuries who fled Russia and when she arrived in the UK, was hidden in the Victoria Palace theatre, where she lived for 4 years.

Pavlova’s will serve serious cocktails and light bites with friendly, attentive service, meaning your theatre bar experience is special. As well as theatre goers, Pavlova’s is open to those who live and work locally, so those in the Victoria area can pop in for cocktails or take your pick of over 38 types of gins from the hidden gin cupboard.

The bar will be open throughout the day for those looking for a light bite. In the morning, croissants and coffees will be on offer, while, a selection of snacks, speciality paninis, charcuterie and cheeses will be available for lunch and dinner. The drinks list has been curated by the group’s Bar Manager, Jay Doy. The signature cocktail, ‘The Dying Swan’, has been named after Anna Pavlova’s fabled dance and features a music box that opens to reveal a rotating ballerina and a gin-based cocktail.

The theatre bar launches in partnership with Sir Cameron Mackintosh, owner of the theatre currently showing the hit musical Hamilton.


Introducing The Betterment

We are pleased to announce that we are launching a brand new London restaurant, The Betterment, opening at The Biltmore Mayfair. Located on Grosvenor Square, the opening marks a grand return to the area as it is where Jason rose to prominence launching Maze in 2005. The Biltmore Mayfair is Europe’s first property within the LXR Hotels & Resorts collection.

The Betterment’s Head Chef will be Paul Walsh, who launched and led Jason Atherton’s City Social for five years and achieved the restaurant’s Michelin-starred status within seven months of its opening. The Betterment’s seasonally driven menu will feature beautifully presented dishes of wood-fired fish and meats, fresh seafood, signature salads and plant-based plates. At the heart of the restaurant will be a dramatic and rustic open grill, which will bring the kitchen into the dining room and add a sense of theatre to the space. Also in The Biltmore Mayfair and led by The Social Company is The Terrace, The Tea Lounge and The Pine Bar serving world-class cocktails.

On the launch of The Betterment, Jason Atherton comments: “To be working on the launch of The Betterment at The Biltmore Mayfair is incredibly exciting. When we were approached by Mr Kwek, Chairman of Millennium & Copthorne Hotels plc, owner of the Biltmore Mayfair, we just knew it was an opportunity we couldn’t let pass. We chose the name The Betterment to encapsulate our journey from opening Pollen Street Social in 2011 to today, highlighting the progression of our food, ethos and way of thinking. To be returning to Mayfair’s Grosvenor Square after nine years is very special to me, and I’m thrilled to be doing it alongside world class chef and friend, Paul Walsh.”
